Grand Anse beach, Grenada.

It was the beginning of fifth term in Grenada, so I decided to go to the beach with a couple of friends. Look at how stress-free I am here. I hope I can say the same after July. Anyway, we can do all things through Christ who strengthens us, Amen!


And I got to play some volleyball too, so it was just perfect :)

RIP Daddy

So it's the 3rd of February again, and I always have to count back to count back to when you passed away because it feels like forever, even though you left us 2 years ago. We all miss you so much, and we can't thank you enough for all the great opportunities you provided for us, and for setting us on our paths. I really can't thank God enough for having a great man such as you for a father. You taught us the meaning of hard work and that nothing good comes easy, being a great example yourself on how to be an achiever and to always strive for the best.

If people really could get just one wish of a lifetime to come true, all I'll ask for is for you to be here right now. But we know how that is. Memories of you remain forever in our hearts. Rest in perfect peace with our Lord in Jesus name, Amen.

Finally found "Kpomo" (cow skin) and "towel" in Grenada


You already know there was some serious cooking going on after this. And I had forgotten how long it takes for these to cook, and the cleaning too! Anyway, it's always worth it ;)

Making cornbread/cake (How to)

I'll just call this cake, because when I made it for my friends, they said it was more or less like cake. And it's sweeter than the regular cornbread, so feel free to reduce the amount of sugar as you like.

What you need:
-1.5 cups of flour
-0.5 cup of cornmeal
-2/3rds cup of sugar
-1/3rd cup of oil
-1/2 teaspoon of salt
-1 tablespoon of baking powder
-3 tablespoons of honey
-2 eggs
-1 cup of cold milk
What to do:
-Turn oven on to preheat (my current oven has levels 1,2,3 so I turn the knob between 2 and 3, which is a higher heat level)
-Combine the dry ingredients
-Add the wet ingredients
-Mix properly (add any coloring as desired)
-Pour into your baking pan(s).
-Bake for about 30-40 minutes.
Check with a toothpick if its ready inside (stick it in, and draw it out. It should come out completely clean)

-Enjoy.
