2013 Events~ Thanksgiving Dinner By My Sis and Her Friends


So for thanksgiving 2013, all I did was make a cake. My younger sis and her friends took charge in the kitchen. Never forget, too many hands spoil the broth.

-Fried rice
-Jollof rice
-Puff puff
-Mashed potatoes with chicken and shrimp gravy
-Plus corn on the cobs to finish with, and turkey, of course.
Turn up with the food!!!

So I went to the Nigerian parade for the first time in NY this year. It was fun, something exciting to do other than study. But other than that, barely noticed. Hopefully the time will come when we'll look forward to more than jollof-rice on independence day. God help our country.

Pizza for labor day? Yes.

Since I have an extra day at home, I had to go to get some yeast today, knowing there'll be some extra action in the kitchen. I'll post the pizza pictures tomorrow. Have to get some studying done tonight then, if not, I'll be a guilty chef tomorrow. :D

Grand Anse beach, Grenada.

It was the beginning of fifth term in Grenada, so I decided to go to the beach with a couple of friends. Look at how stress-free I am here. I hope I can say the same after July. Anyway, we can do all things through Christ who strengthens us, Amen!


And I got to play some volleyball too, so it was just perfect :)

RIP Daddy

So it's the 3rd of February again, and I always have to count back to count back to when you passed away because it feels like forever, even though you left us 2 years ago. We all miss you so much, and we can't thank you enough for all the great opportunities you provided for us, and for setting us on our paths. I really can't thank God enough for having a great man such as you for a father. You taught us the meaning of hard work and that nothing good comes easy, being a great example yourself on how to be an achiever and to always strive for the best.

If people really could get just one wish of a lifetime to come true, all I'll ask for is for you to be here right now. But we know how that is. Memories of you remain forever in our hearts. Rest in perfect peace with our Lord in Jesus name, Amen.

Making cornbread/cake (How to)

I'll just call this cake, because when I made it for my friends, they said it was more or less like cake. And it's sweeter than the regular cornbread, so feel free to reduce the amount of sugar as you like.

What you need:
-1.5 cups of flour
-0.5 cup of cornmeal
-2/3rds cup of sugar
-1/3rd cup of oil
-1/2 teaspoon of salt
-1 tablespoon of baking powder
-3 tablespoons of honey
-2 eggs
-1 cup of cold milk
What to do:
-Turn oven on to preheat (my current oven has levels 1,2,3 so I turn the knob between 2 and 3, which is a higher heat level)
-Combine the dry ingredients
-Add the wet ingredients
-Mix properly (add any coloring as desired)
-Pour into your baking pan(s).
-Bake for about 30-40 minutes.
Check with a toothpick if its ready inside (stick it in, and draw it out. It should come out completely clean)

-Enjoy.

How to make oatmeal cookies

This is one of the easiest things to make. Here's what you'll need:
-Raisins
-3/4 cup of flour
-3 cups of oatmeal
-1/2 teaspoon of baking soda
-1/2 teaspoon of salt
-1/2 teaspoon of cinnamon or nutmeg
-3 eggs
-1 cup of sugar and 3/4 cup of butter.

What to do:
-Just mix the butter and sugar, and then add the whisked eggs.
-Next, mix the flour, baking soda, salt, nutmeg or cinnamon (optional), raisins (optional) and oatmeal.
-Then add the dry stuff to the wet mixture and stir well.
-Make them as big/small as you want on your baking sheet in the oven tray. You can flatten them with a floured spoon.
- Bake in preheated oven until done (about 25 minutes). I use the "brownness" of the bases to determine if they are ready. So check them often.
- Enjoy.

Above are CNN's links to the interview. Well, the confrontation, not interview. I was actually looking forward to hear each of their points for and against guns in America. I wouldn't say I got much from this, but it was entertaining to watch.

Woman survives amniotic fluid embolism!

Okay, I just saw this article on Yahoo news and I'm amazed. This woman is blessed to be alive and with her family. I studied this only a few months ago in school and the picture painted in my head was that chances of survival are extremely tiny.
